Sardine Toast

I’m all in for sardines! Sardines, a small, oily, nutrient-dense and flavourful group of fish, are having their moment and have become the must-have or “IT” pantry staple! You’re going to want to try my Sardine Toast recipe! Take a trip to your local grocer or food market, head down the canned foods aisle and grab yourself a can of sardines. This dish is bright, creamy, crunchy, delicious, fresh, flavourful and oh so satisfying! Good things come in small packages, and this tinned fish is no different: small fish, big flavour!


My Sardine Toast recipe starts off with a can of sardines packed in neutral oil. Sardines are rich in omega-3 fatty acids, high in protein and packed with vitamins. I love using bone-in, skin-on sardines for this recipe. The small and soft, edible bones are a source of calcium and give this Sardine Toast a little crunch. If fish bones aren’t your thing, use a can of deboned, skinless sardines. The canned sardines are drained and added to a bowl, before being flaked and mashed. Sour cream and mayonnaise are added to the mix, imparting creaminess, richness and some tang. A squeeze of lemon juice gives this Sardine Toast a hint of acidity and brightness while also neutralizing the natural “fishy” flavour or taste. Dill, salt and freshly ground pepper round out the flavours with herbaceous, salty and peppery tasting notes, while also adding a pop of colour to this dish.


The sardine mixture is then spooned over a slice of toast. I love using whole wheat or multi-grain bread for this recipe, but you can substitute it for your favourite slice or whatever bread you have on hand! The world is your oyster here! Garnish the Sardine Toast with an extra sprig of dill and serve and enjoy! All the ingredients combine to create a creamy, crunchy, fresh, flavourful, savoury, tangy and satisfying bite!

Ingredients:

  • 1 (106g) can of sardines in oil, drained

  • 1 ½ Tbsp finely chopped shallot (approx. 1/2 medium shallot)

  • 1 ½ Tbsp full-fat sour cream (See Notes below)

  • ½ Tbsp mayonnaise

  • 2 tsp freshly squeezed lemon juice

  • 1 tsp finely chopped dill fronds, packed

  • Sea salt and freshly ground pepper, to taste

  • Slice of gluten-free or regular whole wheat or multi-grain bread, toasted

  • Additional dill frond (optional), as garnish


Instructions:

  1. Add the sardines to a medium bowl and using a fork, mash until smooth or to your desired consistency.

  2. Toss in the shallot, sour cream, mayonnaise, lemon juice and dill and mix until fully incorporated. Season with salt and pepper and set aside.

  3. Toast the slice of bread and place it onto a small plate. Spoon the sardine mixture over top and garnish with additional dill fronds. Serve and enjoy!

Notes:

  1. Up the Protein: If you're looking to add a little more protein to this dish, simply substitute the sour cream in this recipe on a 1:1 basis with Greek yoghurt.
