Good morning, sunshine! Start your day off right with my easy Breakfast Sandwich recipe! This sandwich will have you ditching your go-to morning fast-food order. It’s crispy, creamy, rich, savoury, tangy and so delicious!
My Breakfast Sandwich recipe starts off with an English muffin. The English muffin is toasted until crispy, crunchy, golden-brown and delicious. Toasted bread and butter go hand in hand! A generous knob of butter is spread over the base of the English muffin, melting into all the nooks and crannies. That’s what I call a buttery bite!
Now, for the fun part – let’s get to building a delicious breakfast sandwich! The buttered English muffin is topped with a store-bought or homemade breakfast sausage patty. This juicy pork-based patty is flavoured with dried and fresh herbs, maple syrup and pepper, giving the sandwich a savoury, sweet and peppery flavour. Cheddar cheese and pickled red onions round out the flavours, imparting brightness, creaminess, crunchiness and tanginess.
A breakfast sandwich wouldn’t be complete without the addition of a perfectly fried egg! Frying an egg can be daunting but it doesn’t have to be! The egg is cooked in a non-stick skillet for 3 – 3 ½ minutes or until the egg white has set and the yolk is runny! The runny yolk REALLY makes this breakfast sandwich sing! Not only does it add creaminess and richness, but it creates the most luxurious sauce that envelops all the ingredients. Now, for the finishing touch – a drizzle of hot sauce. This spicy condiment brings the heat and gives the sandwich a saucy spin! There you have it, a tasty breakfast sandwich that can be made and enjoyed in the comfort of your own home!

Cook Time: 3 – 3 ½ minutes
Total Time: 5 – 5 ½ minutes

Ingredients:
1 large egg
1 Tbsp extra virgin olive oil
Kosher salt and freshly ground pepper, to taste
1 English muffin
½ Tbsp unsalted butter
1 store-bought or homemade breakfast sausage patty, cooked and warmed
Slice of sharp cheddar cheese
A heaping forkful of pickled red onions
A drizzle of hot sauce, such as Sriracha, to taste
Instructions:
Crack an egg into a small ramekin or bowl and set aside.
Add 1 Tbsp olive oil to a small non-stick skillet set over medium heat. Once hot, add the egg and season with salt and pepper. Cook uncovered for approximately 3 – 3 ½ minutes or until the egg white has set and the yolk is still runny.
While the egg is cooking, using a sharp knife, cut the English muffin in half and toast it until golden-brown in colour. Place the toasted halves onto a plate and spread butter over top.
Layer the breakfast sausage, cheddar cheese, pickled red onions and cooked egg over the English muffin half. Drizzle some hot sauce over top.
Cover with the top half of the English muffin and serve and enjoy!
