Rolled oats, milk, yoghurt, berries, an apple, honey and warming spices combine to create a make-ahead breakfast that couldn’t be easier to make! Simply add the ingredients into a bowl, refrigerate overnight, toss in a grated apple, stir and enjoy! There’s beauty in simplicity and this Bircher Muesli recipe exemplifies just that!


Bircher Muesli, also referred to as Swiss Muesli, originated in Switzerland around the turn of the 20th century by a physician named Maximillian Bircher-Benner. He believed fresh, raw ingredients could heal and nourish the body in ways heavily cooked meals couldn’t. That’s where the idea for Bircher Muesli originated. Raw oats are soaked in a liquid overnight and tossed with a grated apple just before being eaten. The Bircher Muesli recipe has evolved over the decades with the incorporation of yoghurt, fresh and frozen fruits and nuts or seeds. My Bircher Muesli recipe starts off with old fashioned rolled oats. The oats are soaked overnight in milk, yoghurt and blueberries. The milk and yoghurt work to soften the oats, giving them a soft and creamy texture, while the blueberries add a pop of colour and some sweetness. A grated apple, a quintessential ingredient in Bircher Muesli, gives this dish incremental fibre, sweetness and creamy texture. A spoonful of honey and a pinch of cinnamon impart added complexity, sweetness and warmth. Fresh berries, such as raspberries, and chopped nuts or seeds serve as the finishing touch! All the ingredients combine to create a creamy, fresh, fruity and satisfying spoonful!

Total Time: 8 hours and 5 minutes (includes 8 hours of inactive time)

Serves: 2 - 4


Ingredients:

  • 1 cup gluten-free, old fashioned rolled oats

  • 1 cup 2% milk

  • ½ cup plain yoghurt

  • ½ cup fresh or frozen blueberries

  • Pinch of ground cinnamon

  • 1 Honeycrisp, Gala or Pink Lady apple

  • 1 tsp honey

  • ½ cup fresh raspberries

  • 2 Tbsp combination of chopped, shelled nuts and seeds, such as almonds, pumpkin seeds, hemp seeds and ground flax


Instructions:

  1. To a medium bowl, add the rolled oats, milk, yoghurt, blueberries and cinnamon and stir until combined. Cover and refrigerate for at least 8 hours or overnight to allow the oatmeal to soften and for the flavours to meld.

  2. Once set, grate an apple using the larger holes of a box grater, avoiding the core. Discard the core, seeds and stem.

  3. Add the grated apple and honey to the oatmeal and mix until combined. Top with fresh raspberries and chopped nuts or seeds.

  4. Spoon the cold Bircher Muesli into individual bowls and serve and enjoy!

  5. For optimal freshness, cover and store any leftovers in the refrigerator and enjoy them the following day!
