My Chocolate Chia Pudding recipe consists of chia seeds, milk, cocoa powder, honey and fragrant and warming aromatics. Chia seeds serve as the star of this dish. These edible seeds are highly nutritious, protein rich and full of fibre and omega-3s. If the proof is in the pudding, then the chia seeds are the magicians behind this recipe! When combined with milk, chia seeds absorb the liquid when refrigerated overnight, transforming this dish into a creamy, rich and pudding-like snack. This recipe calls for two types of milk: coconut milk and 2% dairy milk. The coconut milk imparts creaminess, fruitiness, richness and viscosity while the dairy milk gives the chia pudding a mild and slightly sweet flavour profile and a lighter consistency. This powder, made from dried and ground cocoa solids, imparts an intense, luxurious and rich chocolate flavour. Honey or maple syrup add a hint of sweetness to this breakfast treat and perfectly compliment the ingredients in this dish. A dash of vanilla and a pinch of cinnamon round out the flavours, adding complexity, sweetness and warmth to this chia pudding. All the ingredients combine to create a guilt-free, tropical and satisfying bite!

Ingredients:
6 Tbsp chia seeds
1 ½ Tbsp unsweetened cocoa powder
2 tsp honey or maple syrup
1 tsp vanilla extract
¼ tsp ground cinnamon
1 cup lite, canned coconut milk, shaken (See Notes below)
1 cup 2% milk
Fresh fruits and Greek yogurt, as a topping
Instructions:
To a glass container, add the chia seeds, cocoa powder, honey, vanilla, cinnamon, coconut milk and 2% milk. Whisk until fully incorporated, set aside and let the mixture stand for 5 minutes.
After 5 minutes, whisk the mixture again, breaking up any clumps of chia seeds that may have formed. Cover and refrigerate for at least 8 hours or overnight.
Once set, spoon an individual portion of the chia seed pudding into a small bowl. Enjoy it as is or top it with a dollop of Greek yoghurt and a handful of fresh fruits, such as raspberries, blackberries or blueberries.

Notes:
Shake, Shake, Shake: Be sure to shake the can of coconut milk well before opening as the coconut cream settles as the top. Shaking the can reincorporates the coconut cream with the coconut water, resulting in a smooth texture and uniform flavour.
More Decadence, Please!: For a chia seed pudding with a thicker consistency and richer flavour, substitute the lite coconut milk in this recipe on a 1:1 basis with full-fat, canned coconut milk.
