Sandwiches don’t get any more delicious than my Lamb Pita Sandwich. Reminiscent of my travels to Greece, this pita sandwich is loaded with flavourful, juicy and tender lamb, tangy tzatziki, fresh cucumbers, sweet tomatoes, spicy onions and salty Feta cheese. The Greek pita serves as the perfect base for this sandwich. It’s soft and pillowy yet sturdy enough to contain all those tasty ingredients. All the ingredients combine to create a creamy, fresh, tangy, salty and savoury bite! Let’s give your sandwich game a little upgrade with my 5-minute Lamb Pita Sandwich recipe! My Lamb Pita Sandwich recipe uses tender, roasted leg of lamb. Now, you can buy ready-made roasted leg of lamb at your local grocer or you can go the extra mile and grill or roast your own at home. Either option will yield truly magical results! Roasting leg of lamb can be daunting but it doesn’t have to be! Roasted Leg of Lamb

My Lamb Pita Sandwich comes together quickly and uses a handful of simple and everyday ingredients. Enjoy it for lunch, dinner or as a snack! You really can’t go wrong! So, let me show you how it’s done. Grab a spoon and come and cook with me!

Serves: 1

 

Ingredients:

  • 1/2 cup roasted leg of lamb or souvlaki, thinly sliced

  • 1 Greek pita (See Notes below)

  • 1/3 cup store-bought or homemade tzatziki

  • 5 - 10 slices of cucumber, thinly sliced

  • 3 slices of tomato, cut into ¼ inch slices

  • 1 slice of red onion, thinly sliced and halved

  • 3 Tbsp Feta, drained and crumbled

  • Dill fronds (optional), as a topping

 

Instructions:

  1. Place the sliced lamb into a small microwave safe bowl and heat for 30 seconds – 1 minute or to your desired temperature. Set aside.

  2. Lay the Greek pita onto a plate and top it with tzatziki, spreading it evenly over the base.

  3. Add the cucumber slices, overlapping them ever so slightly. For a lighter sandwich, stick with 5 slices of cucumber or 10 slices for a heartier feel. Then, add the tomato slices and red onion.

  4. Top with a generous portion of shaved lamb and some crumbled Feta and serve and enjoy!


Lamb Pita Sandwich

Notes:

  1. Warming the Pita: This is optional but highly recommended. The heating process softens the pita and makes it more pliable and easier to wrap. Place the pita onto a microwave-safe plate and microwave it for 5 - 10 seconds to warm it through. You are looking for a pita that is warm to the touch rather than hot!
