Meat on a stick, anyone?! My Melt In Your Mouth Lamb Souvlakis are a home run! They hit all the right notes - tender, juicy, flavourful and almost too delicious to eat! My Greek inspired marinade infuses the lamb with a bright, refreshing and bold lemony, garlicky and herbal flavour, muting the prominent gamey taste of this protein. The acid in the marinade works to tenderize the meat, leaving you with melt in your mouth morsels of lamb! The lamb is then grilled to perfection, with a slight char, imparting tons of flavour. Delish!

Serves: 4 - 6
Ingredients:
Lamb Souvlaki
2 lbs boneless lamb leg, cut into 1 1/2 inch cubes
1/2 medium red onion, peeled, halved and quartered
Parsley leaves and lemon slices, as garnish
Store-bought or Homemade Tzatziki, for serving
Marinade
1/2 cup freshly squeezed lemon juice (approx. 3 medium lemons)
2 1/2 Tbsp extra virgin olive oil
2 Tbsp red wine vinegar
4 cloves of garlic, peeled and minced
1/2 Tbsp lemon zest (approx. 1/2 a medium lemon)
2 tsp dried oregano
1/2 tsp kosher salt
1/4 tsp freshly ground pepper
Instructions:
To a 8” x 10” baking dish or large bowl, add the lemon juice, olive oil, vinegar, garlic, lemon zest, oregano, salt and pepper and whisk until fully combined.
Add the lamb and give it a good mix, ensuring that it is evenly coated in marinade. Transfer the lamb to the refrigerator to marinate for at least 6 hours or preferably overnight.
Preheat the grill to 375F. While the grill preheats, remove the lamb from the refrigerator and let it come to room temperature for 20 minutes.
Grab four 10 inch metal skewers. Add 4 pieces of lamb to each skewer, separating each piece of meat with 2 onion layers.
Once the grill has reached the desired temperature, place the lamb skewers onto a seasoned or oiled grill.
Cover and grill for a total of 7 minutes for medium or to your desired level of doneness. Rotate the skewers every 1 1/2 minutes during the cooking process.
Remove the skewers from the grill and carefully arrange them on a heatproof serving platter or plate. Garnish with fresh parsley leaves and lemon slices.
Serve the lamb souvlaki with tzatziki, pitas, grilled vegetables, potatoes or rice and a salad. Enjoy!
