My Turkey Sandwich with Apple, Brie and Cranberry recipe starts off with 2 slices of multigrain bread. Let’s be honest, we (may have) indulged a little too much over the holidays, so hearty, fibre-laden, multigrain bread seems like the prudent option for this sandwich. The bread is toasted until golden-brown and delicious. You don’t have to toast the bread, but I highly recommend it as this ingredient-rich sandwich needs a solid and sturdy base! Mayonnaise and Dijon mustard are spread over the base, adding rich, spicy and tangy notes to this sandwich. A sandwich wouldn’t be complete without some leafy greens. In comes the arugula, adding freshness and peppery notes.
Now, for the star of the Thanksgiving dinner – oven roasted turkey. Oven roasted turkey is thinly sliced and layered overtop of the arugula. I love using roasted turkey breast for this recipe due to its mild flavour and tender texture. But, if dark thigh meat is your jam, simply substitute it for breast meat on a 1:1 basis. Slices of Granny Smith apple and Brie are layered over top. The tartness of the Granny Smith apple and the buttery, creamy and rich nature of Brie pair beautifully with all the ingredients in this dish.
You can’t (or wouldn’t want to) have turkey without some store-bought or homemade cranberry sauce, so it’s only natural that it would be incorporated into this sandwich. A few spoonfuls will do! The cranberry sauce really makes this sandwich sing! It’s bright, tangy, tart, slightly sweet and adds a pop of colour and a playful texture. Now, all that’s left to do is top this sandwich with the remaining piece of toast and you’re ready to indulge and enjoy! All the ingredients combine to create a sandwich that is equal parts exciting and delicious!

Ingredients:
2 slices of multigrain bread, toasted
1 Tbsp mayonnaise
½ Tbsp Dijon mustard
1 cup arugula
3 slices of roasted turkey breast, thinly sliced
½ Granny Smith apple, thinly sliced
2 slices Brie, cut into 1/4 inch slices
2 ½ Tbsp store-bought or homemade cranberry sauce
Instructions:
Place a slice of toast onto a large plate or cutting board. Spread mayonnaise and mustard over the base.
Top with arugula, followed by slices of roasted turkey, brie and apple.
Add a few spoonfuls of cranberry sauce over the sliced apple and top with the remaining piece of toast.
Cut the sandwich in half and serve and enjoy!
