Winner, winner, schnitzel sandwich dinner! Happiness is nothing short of a delicious sandwich! This schnitzel sandwich is crispy, juicy, mouthwatering, tender and so satisfying. The best sandwiches start with quality ingredients that are complementary in nature; an array of contrasting textures and flavours; and a strategic layering of ingredients to keep the sandwich intact when you take that first bite! This sandwich is the sandwich of all sandwiches and is good to the very last bite!
My Schnitzel Sandwich recipe starts off with the star of the show - a crispy, crunchy, juicy and tender cutlet. The pork cutlet, or schnitzel, is tenderized, breaded and fried to perfection! It’s sandwiched between a soft and pillowy sandwich roll, which serves as the perfect vessel for this sandwich. The sandwich roll is then coated in a generous amount of mayonnaise and Dijon mustard, imparting creaminess, richness, tanginess and some bite! Fresh and ripe tomato slices and mild yet sweet leaf lettuce are added to the mix, adding another layer of flavour and texture. Pickled red onions are the finishing touch! These onions are quickly pickled in a tasty vinegar-based brine. They are slightly crisp, bright, tangy and sweet and add a pop of colour and zesty flavour to this loaded sandwich. All the ingredients combine to create a mouthwatering and satisfying bite!

Ingredients:
- 1 large sandwich roll 
- 1 warmed, cooked schnitzel, cut into 3 pieces 
- 1 1/2 Tbsp mayonnaise 
- 1 Tbsp Dijon mustard 
- 3 pieces of leaf lettuce, rinsed and dried 
- 2 slices of ripe heirloom tomato, rinsed and thinly sliced 
- Sea salt and freshly ground pepper, to taste 
- ¼ cup store-bought or homemade pickled red onions 
Instructions:
- Using a bread knife, cut the sandwich roll in half horizontally. Lay the sliced sandwich roll, crust-side down, on a cutting board or large plate. 
- Spread mayonnaise over the bottom roll and mustard over the top. 
- Arrange the lettuce over top of the mayonnaise, followed by the schnitzel and the tomato slices. Season the sliced tomato with salt and ground pepper. 
- Top with pickled red onions and cover the sandwich with the remaining half of the sandwich roll. Serve and enjoy!
