Sourdough bread, avocado, a perfectly fried scallion egg and chili crisp set the tone for an eggceptionally good start to the morning! First, we eat and then we conquer the day and this breakfast staple will help you do just that! My Avocado Toast with Scallion Fried Egg recipe is a fresh, simple and satisfying breakfast that hits the spot every time!


Breakfast of champions?! I think YES! My Avocado Toast with Scallion Fried Egg recipe starts off with a thick slice of sourdough bread. I love using sourdough bread given its tangy flavour and airy and chewy consistency and texture. Sourdough bread is thickly sliced to give this open-faced sandwich a heartier feel and some substance. The bread is toasted in a skillet until golden brown and crunchy. It’s topped with slices of avocado for some added creaminess, fibre, healthy fats and richness.


Avocado Toast wouldn’t be complete without a sunny side up fried egg. The fried egg gets a oniony glow up with the addition of chopped scallions. Sizzling scallions in hot oil makes everything better! The scallions caramelize ever so slightly, imparting tons of freshness, sweetness and a mild onion flavour. The egg is cracked over top, seasoned with salt and cooked until the yolk is jammy and the whites are perfectly set. Basting the egg in hot oil is the key to achieving a perfectly cooked fried egg. The scallion fried egg is layered over the avocado and is topped with a spoonful or two of umami-filled chili crisp. Chili crisp oil takes this toast to extraordinary heights. This store-bought sauce is made using a variety of dried chilis, sesame seeds, onions, shallots, mushrooms and seaweed and is worth the purchase! It’s good on just about anything – transforming dishes one spoonful at a time! All the ingredients combine to create a fresh, crispy, crunchy, rich, salty and oh so satisfying bite!


Avocado Toast with Scallion Fried Egg

This dish comes together in under 10 minutes, uses a handful of simple and everyday ingredients and couldn’t be easier to make. Prep Time: 2 minutes

Cook Time: 8 minutes

Total Time: 10 minutes

Serves: 1

 

Ingredients:

  • 2 ½ Tbsp extra virgin olive oil

  • 1 thick slice of regular or gluten-free sourdough bread (approx. ¾ inch in thickness)

  • 2 scallions, thinly sliced

  • 1 large egg

  • Pinch of sea salt

  • ½ ripe avocado, peeled, pit removed and thinly sliced

  • 1 – 2 tsp regular or gluten-free chili crisp oil, to taste 

 

Instructions:

  1. To a medium skillet, set over medium heat, add ½ Tbsp olive oil. Once hot, place the slice of sourdough bread over top and cook for 2 minutes per side or until golden brown. Then, remove the toasted sourdough bread from the skillet and set aside.

  2. Reduce the heat to medium-low and add the remaining 2 Tbsp olive oil and scallions and cook for 1 minute.

  3. Crack an egg into the middle of the skillet and season with salt. Cook the scallion egg for 3 minutes, basting it in hot oil throughout. This process will ensure that you’re left with a jammy yolk and fully set egg whites.

  4. Transfer the toasted sourdough slice to a plate and top it with avocado and the scallion fried egg. Spoon chili crisp oil over top and serve and enjoy!
