High Protein Chocolate Mousse

Guilt-free and packed with protein, my High Protein Chocolate Mousse is the best of both worlds! Cottage cheese and chocolate combine to create a creamy, dreamy, decadent and rich snack. Who knew that satisfying your sweet tooth and hitting your protein goals could be this easy! This sweet treat tastes like a cheat meal but acts like a protein shake. I consider that a win-win!
My High Protein Chocolate Mousse starts off with a good dose of cottage cheese. Cottage Cheese is a soft, nutrient dense cow’s milk cheese that is high in both calcium and protein. When blended, cottage cheese transforms from chunky curds into a creamy, silky, smooth and thick mixture. The blending process incorporates air into the cottage cheese giving this sweet treat a velvety and airy mousse-like consistency.
Melted dark chocolate is added to the mix, imparting complexity, intensity, richness and maximum chocolate flavour while also perfectly balancing the tanginess of the cottage cheese. Dark chocolate is the gold standard when it comes to making chocolate mousse. Its higher cocoa and fat content give the mousse much needed stability. As the mousse chills, the fat in the cocoa hardens, trapping the whipped air bubbles, leaving you with fully set mousse that is soft, light and airy. A spoonful of honey gives it some added sweetness, complexity and earthy and floral notes. A dash of vanilla extract brings the mousse together, rounding out the flavours with some extra sweetness and warmth. This dessert is sweet tooth approved! It satisfies cravings one spoonful at a time!
Unlike a traditional chocolate mousse recipe, which relies heavily on chocolate, heavy cream, sugar, eggs and butter to achieve the signature light, airy and rich flavour and texture, cottage cheese flips the script. This no-bake dessert recipe couldn’t be easier to make, comes together in five minutes and is beyond delicious. Enjoy it for breakfast, as a post-workout snack or for dessert. Total Time: 5 minutes – 35 minutes (includes 30 minutes of inactive time for chilling)
Serves: 2 – 4
Ingredients:
150g dark chocolate (approx. 1 ½ chocolate bars)
1 tsp extra virgin olive oil (See Notes below)
2 cups 2% cottage cheese
1 Tbsp honey or maple syrup
1 tsp vanilla extract
¼ cup whipped cream (optional), as a topping
Fresh fruit, such as cherries or berries (optional), as a topping
Instructions:
Break the dark chocolate into bite-size pieces. Toss the chocolate and olive oil into a small, microwave safe bowl and microwave for 1 – 1 ½ minutes or until melted, stirring the chocolate every 30 seconds. Once melted, set the chocolate aside for a few minutes to slightly cool.
To a food processor, add the cottage cheese, honey, vanilla extract and chocolate and blend for 1 minute or until silky and smooth.
Hungry? Enjoy immediately for instant gratification. For best results, transfer the mousse into an airtight container and refrigerate for at least 30 minutes to allow the flavours to meld and for the mousse to chill and fully set.
Spoon the High Protein Chocolate Mousse into individual serving bowls and top with whipped cream and fresh fruit. Serve and enjoy!

Notes:
Tempering Chocolate: I love adding a little extra virgin olive oil to the chocolate before melting. The oil imparts a hint of fruitiness and earthiness, prevents the chocolate from seizing when heated and gives the mousse a shiny, glossy sheen. If you don’t have olive oil on hand, substitute it on a 1:1 basis with avocado, sunflower or coconut oil for best results. For a more neutral flavour, opt for avocado or sunflower oil. For a bolder and more pronounced flavour and some tropical flair, use coconut oil.
