Raw Carrot Salad

From farm to table with my Raw Carrot Salad recipe. This salad is bold, colourful, crunchy and so delicious! It’s my kind of comfort food – good food, good mood! This dish comes together in 10 minutes, uses a handful of everyday ingredients and couldn’t be easier to make! It’s become one of my favourite salads and may just as well become yours too! This recipe is proof that simple ingredients can yield big flavours and be nutritious to boot!


My Raw Carrot Salad recipe is an ode to carrots. Some may say: a root vegetable appreciation post. This recipe consists of a handful of fresh carrots, green onions, cilantro, sesame seeds and a flavourful lime and honey dressing. The carrots are rinsed, dried and peeled, using a Y vegetable peeler. No grating required here! The vegetable peeler creates long ribbons, channelling noodle vibes without the guilt. The carrot ribbons give this salad dimension, texture, sweetness and a tender crunch. Green onions, or scallions, and fresh cilantro are added to the mix, imparting brightness, herbaecousness, a mild oniony flavour and a peppery kick. A generous sprinkling of sesame seeds round out the ingredients, giving this salad a hint of nuttiness and a little extra crunch. You can forgo toasting the sesame seeds and simply toss raw sesame seeds into this salad. But, with just a few minutes of cook time, you can take sesame seeds from earthy, mild and slightly sweet in flavour to bold, intense, nutty and smoky in nature. Whatever option you choose, this salad is sure to impress!


Raw Carrot Salad

The carrot salad is then tossed and coated in a lime and honey dressing, one that perfectly complements all the vegetables in this dish. The magic is in the dressing! This salad dressing recipe consists of olive oil, lime juice and zest, honey, cumin, sea salt and pepper. It’s bright, fresh, slightly acidic (but, in the best way possible!), sweet, smoky and zesty. All the ingredients combine to create the most craveable and satisfying bite! Try it once and I wouldn’t be surprised if it’s a salad that you’ll be making on repeat!

Serves: 1 – 2

 

Ingredients:

  • 5 large carrots (approx. 680g)

  • 3 green onions, thinly sliced

  • 2 Tbsp fresh cilantro, finely chopped

  • 1 Tbsp sesame seeds

  • 2 Tbsp extra virgin olive oil

  • Juice and zest of 1 lime

  • 1 tsp honey

  • ¼ tsp ground cumin

  • ¼ tsp sea salt

  • ¼ tsp freshly ground pepper


Instructions:

  1. To a small skillet set over medium heat, add the sesame seeds and cook for 3 minutes or until golden in colour, slightly toasted and aromatic. Transfer the toasted sesame seeds into a small bowl and set aside to cool.

  2. Place the carrots onto a cutting board. Using a vegetable Y peeler, peel the carrots into ribbons and set aside.

  3. To a large mixing bowl, add the olive oil, juice and zest of a lime, honey, cumin, salt and freshly ground pepper and whisk until fully incorporated.

  4. Toss in the carrot ribbons, green onions, cilantro and toasted sesame seeds and mix until combined. Serve and enjoy!
