These sweet treats are everything you love about classic Rice Krispie Treats – chewy, crispy, sweet and nostalgic - but with a frighteningly delicious, Halloween twist! My Mummy Rice Krispie Treat recipe consists of Rice Krispie cereal, marshmallows (both big and small), butter, vanilla, cinnamon, white chocolate and candy eyes. Unlike the traditional Rice Krispie Treat recipe, mine uses browned butter, vanilla and cinnamon to give these Mummy Rice Krispie Treats some extra flavour. Unsalted butter is cooked over medium heat until it’s golden-brown or amber in colour. Browned butter gives these treats a toffee-like and nutty flavour profile and the addition of vanilla and cinnamon impart added sweetness and warmth. Large marshmallows are added to the mix and melt and emulsify into the fragrant butter, creating a smooth, sticky and ooey-gooey base. A few cups of Rice Krispies cereal is tossed and folded into the mix, giving you the snap, crackle and pop you expect! Adding miniature marshmallows once the cereal has been incorporated is the secret here! The addition at this stage of the game helps the marshmallows maintain their shape, while also adding a pop of colour and another layer of texture. The mini marshmallows are distributed throughout the chewy treat, creating pockets of soft and pillowy bites.

To take these Rice Krispie squares to frightening heights, you need two key ingredients – white chocolate and candy eyes! White chocolate is melted alongside avocado oil, to give you a silky and smooth consistency. The chocolate is then drizzled over each of the squares, mimicking gauze bandages, and giving them their signature mummy look. The addition of candy eyes (small, medium or large) completes the look, creating a Halloween treat that stares right back at you as you eat!

Ingredients:
- ¼ cup and 2 Tbsp unsalted butter (approx. 88g) plus an additional 1 tsp for greasing the dish 
- ¾ tsp vanilla extract 
- ¼ tsp kosher salt 
- 1/8 tsp ground cinnamon 
- 400g large marshmallows (approx. 63 marshmallows) 
- 6 2/3 cups Rice Krispies cereal 
- 1 ¼ cups miniature marshmallows (approx. 56g) 
- 85g white chocolate, broken into pieces 
- ¼ tsp avocado oil 
- 32 large, medium and/or small candy eyes 
Equipment You’ll Need:
- A 9” x 9” metal, glass or ceramic baking dish or pan 
- Parchment paper 
- Large Dutch oven or heavy-bottomed pot 
- Spatula 
- Cutting board 
- Sharp knife 
- 11” x 17” rimmed baking sheet 
- Wax paper 
Instructions:
- Grease a 9” x 9” baking dish with 1 tsp of butter and line it with parchment paper, leaving ½ inch of overhang for easy removal. Set aside. 
- To a large Dutch oven set over medium heat, add the remaining ¼ cup plus 2 Tbsp of butter. Cook the butter for 4 - 5 minutes, stirring throughout, or until the butter turns golden-brown in colour and emits a nutty aroma. 
- Remove the pot from the heat, add the vanilla, salt and cinnamon and mix until fully incorporated. Then, add the large marshmallows. 
- Reduce the heat to low and cook for 3 – 4 minutes, stirring throughout, or until the marshmallows have fully melted. 
- Toss in the Rice Krispies cereal and miniature marshmallows and fold them into the butter-marshmallow mixture until combined. 
- Transfer the mixture into the parchment-lined baking dish. Using a spatula, press the mixture into the baking dish in single layer. Set the Rice Krispie Treats aside and allow them to cool at room temperature for at least 1 hour. 
- Grab the parchment paper and remove the Rice Krispie Treats from the baking dish. Transfer them to a cutting board and using a sharp knife, cut them into 16 equal squares. 
- Arrange the Rice Krispie squares onto a wax paper-lined baking sheet, leaving 1 inch of space between them. 
- To a small, microwave-safe bowl, add the white chocolate and avocado oil. Microwave for 1 minute or until melted, stirring every 15 seconds. 
- Using a small spoon, drizzle white chocolate (with a back-and-forth motion) over each of the squares. Add 2 small, medium or large candy eyes to each square, pressing them into the melted chocolate ever so slightly. 
- Set aside and let the chocolate set for at least 1 hour. Transfer the Mummy Rice Krispie Treats onto a large serving platter or plate and serve and enjoy!
