My Homemade Dill Pickle Coleslaw recipe is an ode to dill pickles! It’s full of dill pickle flavour - from the pickles, to the dill, to the brine and the celery seed. As my grandmother would always say: the gang's all here! The creamy and tangy dill pickle dressing really makes this dish and brings tons of flavour to this coleslaw party!
My Homemade Dill Pickle Coleslaw recipe starts off with a traditional coleslaw mix. You might be asking yourself what's included in a traditional coleslaw mix?! Good question! A traditional coleslaw mix typically includes shredded green and red cabbage and grated carrots. Now, shredding and grating all those veggies can be incredibly time consuming and tedious. Let's be honest, this is mean't to be a quick and easy salad and we don't have time for that! So, put away your food processor or box grater! My recipe calls for store-bought, pre-shredded coleslaw mix. No shredding or grating required here! That's what I call a game changer and timesaver!
Now, let's add some extra flavour and texture to the coleslaw mix with copious amounts of green onions and dill pickles. The green onions give this salad a little bite while the pickles add some crunch, brininess and salinity. The Dill Pickle Coleslaw is then coated in a creamy, tangy and herbaceous dill pickle dressing! Mayonnaise and sour cream serve as the base of this delicious dressing. Distilled white vinegar and pickle brine (or juice) are added to the mix, balancing the flavours with some acidity and brininess. Sugar, dried dill, celery seeds and freshly ground pepper round out the dressing giving it a herbaceous and slightly sweet flavour profile. All the ingredients combine to create a creamy, crunchy, fresh, tangy and satisfying spoonful!
This salad recipe uses a handful of simple ingredients, couldn’t be easier to make and comes together in just 5 minutes! Ingredients:
Dill Pickle Coleslaw
- 500g package of pre-shredded coleslaw, rinsed and dried 
- 3 scallions, thinly sliced 
- 1/4 cup dill pickles, finely chopped (approx. 1 medium dill pickle) 
Dill Pickle Dressing
- 1/4 cup plus 1 Tbsp mayonnaise 
- 1/4 cup full-fat sour cream 
- 2 Tbsp pickle brine or juice 
- 1 1/2 Tbsp distilled white vinegar 
- 1 Tbsp granulated sugar 
- 1/2 Tbsp dried dill weed 
- 1/2 tsp celery seed 
- 1/4 tsp freshly ground pepper 
Instructions:
- To a large mixing bowl, add the mayonnaise, sour cream, pickle brine, vinegar, sugar, dill, celery seed and pepper. 
- Add the coleslaw, scallions and chopped pickles and toss until all the ingredients are fully incorporated. 
- Transfer the Dill Pickle Coleslaw to the refrigerator for 30 minutes to allow the flavours to meld. Serve and enjoy! 

Notes:
- The Coleslaw Mix is Interchangeable: For this recipe, I love using a traditional coleslaw mix, which is comprised of green and red cabbage and carrots. If you're looking for a heartier texture, substitute the traditional coleslaw mix for a variety that contains cabbage, broccoli stems, Brussel sprouts and radicchio. Whatever option you chose, you'll be pleasantly surprised!
