This Chickpea Salad has a Mediterranean flair and is vibrant, fresh and delicious. It’s full of chickpeas, onion, red and yellow peppers, celery and parsley and topped off with a refreshing and herbaceous Lemon Thyme dressing. The ingredients combine harmoniously to create the most satisfying bite.
My Chickpea Salad is so simple to make and comes together in 15 minutes. It serves as a fantastic side dish but works equally well as a main, given the hearty nature of chickpeas and the abundance of vegetables therein. Ingredients:
Chickpea Salad
2 cans (15 oz) chickpeas or garbanzo beans, drained and rinsed
1 medium red onion, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
3 celery stalks, cut in half lengthwise and thinly sliced
1/3 cup fresh parsley leaves, finely chopped
Lemon Thyme Dressing
1/2 cup extra virgin olive oil
3 Tbsp freshly squeezed lemon juice (approx. 1 medium lemon)
2 Tbsp white wine vinegar
1 Tbsp fresh thyme leaves, finely chopped
1 garlic clove, peeled and minced
1/2 Tbsp Dijon mustard
1/2 tsp coarse salt
1/4 tsp freshly ground pepper
Instructions:
To a large mixing or salad bowl, add the olive oil, lemon juice, white wine vinegar, thyme, garlic, mustard, salt and pepper and whisk until fully incorporated.
Toss in the chickpeas, onion, red and yellow peppers, celery and parsley. Using a large spoon or spatula, mix until all the ingredients are well coated in the Lemon Thyme dressing. Serve and enjoy!
