Feta and a simple tomato cucumber salad combine to create a dish that you’ll be making on repeat this summer! This easy recipe is powered by nature and fuelled by good intentions!
My Crispy Feta Salad recipe starts off with a big block of Feta. The bigger, the better! The Feta is cut into a thick slice, making it easier to handle and fry. It’s then coated in cornstarch, a beaten egg, cornstarch then egg again and is finished off with a final dip in sesame seeds. This combination gives the Feta its crispy and crunchy coating, complex and nutty flavour and golden colour when fried. A few minutes of frying is all you need! The Crispy Feta is then laid over top a quick and easy tomato cucumber salad. A drizzle of honey is the finishing touch, giving this dish some added sweetness.
Fresh from the vine, this Crispy Feta Salad is summer on a plate! If you have a bounty of cherry tomatoes growing in your garden, this is your sign to make this tomato cucumber salad. Cherry tomatoes are bright, juicy, sweet and tangy and serve as the perfect counterbalance to the creaminess and salinity of the Feta. Cucumber wedges and thinly sliced red onions are added to the mix to give this salad some coolness, freshness, pungency and spiciness. The fruits and vegetables are coated in a simple salad dressing! Extra virgin olive oil, red wine vinegar, dried oregano and salt and pepper is all you need. Basil leaves are garnished over top, giving this salad a sweet, savoury and slightly peppery touch! All the ingredients combine to create a crispy, crunchy, fresh, savoury, sweet and satisfying bite!

Ingredients:
Crispy Feta
150g block of Feta
¼ cup cornstarch
1 large egg, beaten
3 Tbsp sesame seeds (See Notes below)
¼ cup extra virgin olive oil
1 – 1 ½ Tbsp honey, to taste
Tomato & Cucumber Salad
340g cherry tomatoes, halved (approx. 2 cups)
1 small English cucumber, halved and cut into bite-sized wedges
1 small red onion, peeled and thinly sliced
1 Tbsp extra virgin olive oil
½ Tbsp red wine vinegar
1/8 tsp dried oregano
6 basil leaves
Instructions:
Using a sharp knife, cut the Feta into a 3 x 4-inch slab, measuring 1-inch in thickness. Then, pat the Feta dry with a tea or paper towel, removing any moisture, and set aside.
Grab 3 shallow bowls, adding cornstarch to the first, a beaten egg to the second and sesame seeds to the third.
Dredge all sides of the Feta into the cornstarch, followed by the beaten egg. Then, repeat the process to achieve a thicker crust.
Place the dredged Feta into the sesame seeds, ensuring it is fully coated on all sides. To ensure the sesame seeds have adhered, pat them into the Feta ever so slightly and set aside.
Set a medium stainless steel skillet over medium heat and once hot, add the olive oil. You know your oil is hot enough when it shimmers and ripples when the skillet is moved.
Carefully add the sesame-coated Feta into the skillet and cook for 2 – 2 ½ minutes per side or until golden in colour. Once cooked, remove the Crispy Feta from the skillet and transfer it to a plate to slightly cool.
To a large bowl or plate, add the cherry tomatoes, cucumber and onion. Drizzle olive oil and red wine vinegar over top. Garnish with fresh basil leaves.
Place the crispy Feta over top and drizzle with honey. Cut into desired pieces and serve and enjoy.

Notes:
Sesame Seeds: I love using a variety of sesame seeds in this recipe, specifically black and white sesame seeds. This combination gives the Feta a pop of colour and added complexity. For perfectly balanced flavours, the sweet spots sits at 2 Tbsp of white sesame seeds and 1 Tbsp of black sesame seeds. White sesame seeds are milder in flavour, sweet and nutty while black sesame seeds have a stronger and more pronounced flavour with earthy and smokey tasting notes. If you can’t find black sesame seeds at your local grocer or food market, fear not! Simply use 3 Tbsp of white sesame seeds for this recipe for equally delicious results!
