My Rich Hot Chocolate recipe starts off with two derivatives of cocoa beans – cocoa powder and chocolate. Unsweetened cocoa powder, a processed powder from roasted, ground and defatted cocoa beans, imparts a concentrated, complex and intense chocolate flavour. While dark chocolate, a finished confectionary treat made using ground cocoa beans, cocoa butter and sugar, has a higher fat content which gives this hot chocolate a creamy, rich and velvety texture. I love using dark chocolate given its intense flavour and slightly bitter nature. However, you can substitute it with semi-sweet chocolate, resulting in a slightly sweeter drink.


Whole milk serves as the base for this Rich Hot Chocolate! This milk variety contributes to a creamier, thicker and full-bodied beverage. I love and highly recommend using whole milk for this recipe, given its higher fat content. The butterfat in the milk blends seamlessly with the cocoa and chocolate, yielding a more decadent taste and smoother finish. You can replace whole milk with 2% milk, skim milk or non-dairy varieties (such as almond or oat milk), but be mindful that it will yield a beverage that is less creamy and indulgent in taste and thinner in terms of consistency and texture.


Granulated sugar and a pinch of sea salt are added to the mix. The sugar adds a hint of sweetness while the sea salt balances out the flavours of this hot chocolate. Sea salt, an unexpected ingredient, enhances the flavour of dark chocolate by adding minerality and complexity, while also reducing bitterness and enhancing sweetness. All the ingredients combine to create a creamy, complex, sweet and rich hot chocolate that is good to the very last sip! Enjoy it as is or top it with marshmallows or a dollop of sweetened whipped cream for a more decadent sip!


Rich Hot Chocolate Recipe

To maximize the flavour and texture of your hot chocolate, you’ll want to:

  • Use quality chocolate - one you enjoy snacking on. Flavour is everything!

  • Add the dry ingredients to the milk and whisk until smooth. This will prevent the cocoa from clumping, while allowing the flavours to meld, leading to a balanced drink with a smoother mouthfeel.

  • Heat the milk mixture over medium heat until tiny bubbles form. You want to avoid boiling it. Boiling milk can burn or curdle, resulting in a hot chocolate that has an overly bitter taste and grainy texture.

  • Break or cut the chocolate into bite-sized pieces before adding it to the milk. This will allow the chocolate to quickly melt and emulsify easily when whisked.

Ingredients:

  • 2 cups whole milk

  • 2 Tbsp unsweetened cocoa powder

  • 1 ½ Tbsp granulated sugar

  • Pinch of sea salt

  • 100g dark chocolate, cut into 1-inch pieces (approx. 2/3 cups)

  • Marshmallows or sweetened whipped cream (optional), as a topping


Instructions:

  1. Break or cut the dark chocolate into 1-inch pieces and set aside.

  2. To a medium saucepan set over medium heat, add the whole milk, cocoa powder, sugar and salt. Whisk and cook the mixture for 5 minutes or until a few tiny bubbles form around the edges of the saucepan.  

  3. Reduce the heat to low and add the chocolate. Whisk and cook for 5 minutes or until the chocolate has melted and the hot chocolate reaches your desired drinking temperature.

  4. Turn off the heat and ladle the hot chocolate into your favourite mugs. Enjoy as is or top with a handful of marshmallows or sweetened whipped cream. Serve and enjoy!
